Deep Chocolate Cupcakes with PB Icing

My sister and I have the evening ahead of us and knew we should bake something chocolate. After toying with various cookie ideas, we decided on chocolate cupcakes. The texture seemed strange when beating it, but they turned out great. The icing is a must!

Beat together

  • 1 cup boiling water, pour over cocoa
  • 2/3 cup cocoa powder

In a seperate bow, whisk dry ingredients, then mix it with cocoa paste

  • 1.5 cup flour (next time I will try oat flower)
  • 1 teaspoon baking soda
  • 1/4teaspoon baking powder
  • 1/4 teaspoon salt

In a seperate bowl, cream the butter and sugar, than beat in eggs and vanilla

  • 1/2 cup butter, softened (we weren’t thinking ahead so we melted the butter in the microwave)
  • 1 cups white sugar
  • 2 eggs
  • 1 teaspoons vanilla extract

Stir the butter/sugar mix into the cocoa/flour mix. The texture is weird, I ended up beating it for 2 minutes or so. Spoon into silicone muffin liners. Bake at 350 for 15 minutes or so.


Mix up the following and top your cakes

  • 1 cup plain Greek yogurt
  • 1 cup icing sugar
  • 2 big tbsp all natural PB
  • vanilla

    These are truly delish! I feel better about eating 3 in one night knowing that the cake part are all healthy ingredients. The PB icing is amaaaaazing and will go nicely with any potluck you attend=)
