Last night I started to get a cold and didn’t feel like spending the night in the kitchen. Luckily we had a cooked chicken from loblaws that was easily paired with leftover veggies, salsa and 1/2 an avocado – easy! Dinner done!

However, there was still lunch to think about. After putting it off all night, I knew I had to get something together…without a trip to the grocery store, or making a mess of the freshly cleaned kitchen.

I am eating my solution now, and it is satisfying.

  • A can of flaked tuna, drained
  • 3 tbs bruschetta (from Costco – no added sugar)
  • 2 tbs roasted veggie anitpesto (from Food Basics – no added sugar)
  • a little mustard
  • Chunks of Feta cheese

Mix that all together, divide in two, put in tupperware, and voila – lunch is done. This could definitley be fancied up by adding avocado, spinach and cucumber for some crunch, but with no meal making motivation, this simple dish will do just fine.
