“Sugar” cookies with coconut flour

I love sweet things! Lately, I have been paticipating in a challenge at my gym which includes NO sugar and no grains – so so very difficult! I need an outlet for dessert so I tried this tonight. They are sugar/shortbread like, but without the sugar. These are not for everyone, but if you are feeling adventerous, give them a shot.

In a bowl, mix

  • 1/4 cup melted butter
  • 1 egg and splash egg whites
  • vanilla
  • 1.5 packets stevia
  • dash of salt

Stir in

  • 1/2 cup coconut flour and let stand for 3 mins

Roll into balls and coat with cinamon. Place on cookie sheet, press with a fork, and bake at 375 for 12 minutes. In my picture, some are sprinkled with cinamon, others are rolled and fully coated (I prefer the latter).

Tonight they did the trick! These are thick and make sure you chew well. Enjoy with a cup of almond milk
