Oat, chocolate chip and coconut cookies

These cookies are some of my fave. They have no butter and no sugar. Instead they are sweetened with honey and stevia, however the stevia can be substituted with sugar. It is very easy, requires no mixer and very little clean up.

You can turn this into a quick breakfast on-th-go but reducing the sweetness and using dried cranberries instead of chocolate chips

Mix the dry ingredients together

  • 3 cups of oats (I like to grind mine)
  • 1 tsp baking powder
  • 1/2 cup (or so) shredded coconut (unsweetened or if sweetened, use less sugar)
  • big dashes of cinnamon
  • 2 packets of stevia (if using brown sugar, add 1/4 cup with wet stuff below)
  • lots of dark chocolate chips and pecan chunks

In another bowl (or shove the dry aside and use the same bow – no big deal if they touch) mix

  • 1/2 cup egg whites (or 2-3 eggs)
  • 1 cup unsweetened apple sauce
  • splash of vanilla
  • honey

Stir everything together and spoon onto cookie sheet. The batter may not stick together firmly, but they will be perfect once cooked. Bake at 350 for 10-12 minutes (or until they are hard to the touch).
