
Before I ever had to bake for myself, I would whip up this one bowl dessert to bring to the party. Simple, like very easy and fool proof. The downfall – no chocolate! But, if you like coconut, you will certainly enjoy 🙂 I made this for Mothers Day (and made another version for my current “clean” eating). However, I did taste test this and was very pleased!
As always, whisk the dry ingredients first to make sure nothing clumps. Add the following to a big bowl
- 1/2 cup flour
- 3/4 cup sugar
In a blender, pour
- 2 cups milk
- 4 eggs
- 1.5 cup of unsweetened coconut
- 6 tbs butter
- 2 tsp vanilla
- a little cinnamon and nutmeg
Add everything together and mix in the blender or using a hand blender. Pour into a pie pan and bake at 450 for about 45 mins or until golden.
No need for a crust. A soft crust forms and Voila – a kind of coconut custard pie – yum!
