Gooey Chocolately Brownies

Brownies are my favorite!! I was making the “raw brownie balls” a lot and I do like them, but with this dessert discovery, those are out. Here we go… In with the New!! This is my favorite clean eating dessert for the moment. Keeping consistent with recent posts – my inspiration is from the site

  • 1 cup pitted dates
  • 3/4 cup hot water (soak dates while you’re prepping)
  • 1 tbs coconut oil
  • 2 tsp pure vanilla extract
  • 2 tsp ground coffee or espresso
  • 3/4 cup unsweetened cocoa powder
  • 3/4 cup almond flour
  • 1/2 tsp baking soda
  • dash of salt

Add dates, water, coconut oil & vanilla to food processor and blend until smooth. You may need more water. In a separate bowl, combine coffee, cocoa, ground almonds, baking soda and salt. Add the dry mixture to the food processor and whiz it all together. I stopped a couple times and used a spatula to scrape it all together.

Line a square pan with parchment paper, or grease it well. Pour in a bake at 350 for 25 mins. It may need some serious assistance to spread – it’s pretty thick! Remove, let cool, and eat it straight from the pan =)
