Fluffy Fabulous (dessert for breaky) Pancakes
Owen had a rough day so I wanted to treat him with his favorite breakfast treat – a short stack of pancakes! These can be topped any which way, but I went full out and caramalized bananas and pecans to go with the Bird Family syrup
As always, combine the dry ingredients before mixing in the wet
  • 3/4 cup milk mixed with 2 tablespoons of white vinegar – set aside and let it sour

Whisk

  • 1 cup all-purpose flour
  • 2 – 3 tbs white sugar, or brown
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • sprinkle of cinamon (if you’d like)

In seperate bowl, mix up

  • 1 egg
  • 2 tbs melted butter
  • vanilla
  • orange extract (optional)

Add the wet to the dry and gently mix – do not overmix or your pancakes will be tough and lose their fluff.
Spoon the batter onto a HOT greeced pan and don’t flip until they start to bubble – be paitent.

Melt butter and brown sugar in a pan and add the banana and pecans. Banana will get soft, but oh so goood. Pecans get coated and cripsy. The longer they can simmer the better.

Wait until you have a nice stack, pile high, and let the syrup flow… Be sure to workout tomorrow haha.
