Chocolate Plus, the not-so-guilty cookie

NEED Chocolate?  Me too!

I often feel the need for a chocolate treat and tend to resort to this quick and versatile recipe. I got the original version from “Lean eating recipes that taste GOOD” and jammed it full of treats. Here’s the latest:

  • 2 cups oats
  • Generous sprinkles of cinnamon
  • 1 teaspoon baking soda
  • 2 heaping tablespoons cocoa
  • 1/2 cup unsweetened coconut

Mix all dry ingredients together and push to the side of the bowl. In the other:

  • 2 eggs
  • 1/3 cup unsweetened apple sauce
  • 1/2 cup brown sugar (or 3 packets of stevia)
  • 2 table spoons of natural peanut butter
  • Vanilla (generous)

Mix the wet together (to break yolks), then combine all together

Add LOTS of dark chocolate chips & chopped pecans. Drop onto non-stick cookie sheet and bake 9-10 mins – Eat em up =)

Carissa, this is great. Going to make the chocolate cookies right now. Looking forward to more good treats and trying out some of the meals too.
