
NEED Chocolate? Me too!
I often feel the need for a chocolate treat and tend to resort to this quick and versatile recipe. I got the original version from “Lean eating recipes that taste GOOD” and jammed it full of treats. Here’s the latest:
- 2 cups oats
- Generous sprinkles of cinnamon
- 1 teaspoon baking soda
- 2 heaping tablespoons cocoa
- 1/2 cup unsweetened coconut
Mix all dry ingredients together and push to the side of the bowl. In the other:
- 2 eggs
- 1/3 cup unsweetened apple sauce
- 1/2 cup brown sugar (or 3 packets of stevia)
- 2 table spoons of natural peanut butter
- Vanilla (generous)
Mix the wet together (to break yolks), then combine all together
Add LOTS of dark chocolate chips & chopped pecans. Drop onto non-stick cookie sheet and bake 9-10 mins – Eat em up =)
love it! we made a ton of almond milk this weekend and used the leftover almond paste to make cookies! well, i pretty much just layed around lamenting my twisted ankle, but the cookies were great!
