Quick dish granola bars

We spent the weekend racing on Bird Ship and I was eating way to many packages granola bars. After day one, I got home and whipped up a batch of my own, much healthier version in a hurray. Because I was had limited time, I only wanted to use one pan so I made a smaller batch in a square pan.

In a large pan, dry roast about 1/2 cup of each:

  • slivered almonds
  • pumpkin seeds (pepitas)
  • flax seeds
  • sunflower seeds
  • shredded coconut (unsweetened)


  • Dry roast 3 cups of large flake oats

In a large bowl add 1.5 cups of rice crispys – optional (you can get gluten free if needed)
I also added 1 cup of Fibre One bran – optional as well

Combine everything above in a large bowl and stir it up. When it is cool enough, add chocolate chips. You could add cranberries or other dried fruit too.

Add lots of honey until everything is coated (aka shinny). This recipe is very versatile!  You could use maple syrup, corn syrup and  peanut butter to hold it all together depending on what you have on hand.

Once everything is coated and mixed up, use wax paper to press it into a pan. Press it firmly and put something heavy on top. Put the pan int the fridge for several hours or overnight to let it set.

Cut it  into bars and wrap in tin foil so you can take them to go. Such a yummy snack. Eat em up!
