Pumpkin Pancakes

Lately I’ve been trying to use food in the house and get my grocery store addition under wraps. Our cupboards are bursting at the seems so I thought I should take a look, and come up with some yummy meals using our current supplies  – success!!

As always, mix up your dry ingredients:

  • 1/4 cup coconut flour + 2 tbs almond flour (you could try with regular flour)
  • 2 scoops chocolate protein powder (optional or you could try cocoa + sugar)
  • 1 tsp nutmeg
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 3 packs stevia (you could use a squirt of honey or maple syrup)

Combine your wet food:

  • 1 egg + 3/4 cup egg whites
  • 1 cup canned pumpkin
  • 1/4 cup unsweetened almond milk

Add everything together and stir until just combined. Make sure your frying pan is very hot and greased (I used butter), then scoop on batter and cook both sides evenly.

I made these little treats good enough that we could eat them as finger food. They are even great to take for lunch. Of course, feel free to top them with syrup, jam or nutella. We experimented with all three =)
