Pumped up Nuts

Yesterday was the first day of my 21 day challenge. 40 other TT members are also participating so hopefully there will be good meal ideas passing around. I got through the day feeling full and eating lots – lots of CLEAN food that is good for the soul.

I love nuts of all sorts but wanted to add extra flavour for my snacks this week. I made sweet and savory almonds to satisfy my cravings, but you could apply this method to your nut of choice.

Savory Almonds:

  • 1 fresh squeezed lime
  • Clubhouse seasoning of choice – I used chipotle mango dry rub
  • 1 cup whole almond

Coat almonds in the lime juice (you can let soak for 10 mins), toss with seasoning and bake at 350 for ~10 minutes.

Sweet Almonds:

  • 1/2 cup egg whites OR 1/2 cup melted coconut oil
  • 2-3 tablespoons cocoa mixed with 1-2 packets of stevia
  • 1 cup almonds

Coat almonds in coconut oil or egg white, toss with cocoa/stevia mix and bake at 350 for ~10 mins.

I did mine in smaller batches because I found the seasoning got chunky after a while. I did about 1/4 cup of almonds at a time and added seasoning as necessary. For a thicker coat on sweet almonds try dipping them in egg whites then coating them with a cocoa/stevia/coconut oil paste.
