Nutty Granola

Where there’s a will, there’s a way… I was really missing granola but knew I could throw something together to satisfy my taste buds while sticking to the TT challenge and continue clean eating. I ended up with a finger food that is a little too convenient for snacking. I do like my granola somewhat sweet, so I made that happen with fruit, stevia, apple sauce and pure vanilla extract.

I kept most of my nuts whole since that is how I had them, but you could certainly use chopped/crushed/sliced/halved nuts instead. The whole nuts make it very easy to pick at and doesn’t require the yogurt and spoon accompaniment.

In a bowl, combine:

  • 1.5 cups hazelnuts
  • 1.5 cups almonds
  • 1.5 cups walnuts
  • 1 cups pecans
  • 1 cups shredded coconut (unsweetened)
  • 1/2 cup pumpkin seeds
  • 1/4 cup sunflower seeds
  • 1/4 cup flax seeds
  • 1/2 cup raisins + 1/cup chopped dates
  • 2 pkg stevia (could add honey instead)

In separate bowl mix up:

  • 1/3 cup coconut oil – melted
  • 1/3 cup apple sauce (unsweetened)
  • 2 tsp pure vanilla extract

Add the wet to the nut & seed and combine until the nuts are all coated. Spread onto a baking sheet and bake at 300 for about 25 minutes. Be sure to flip or mix it up half way through. Watch the granola carefully – it can burn easily. Also, when you remove the well browned, done granola, let it sit still on the counter for a while. This will promote clumping – which I personally LOVE !

Also, you can use any combo of nuts and seeds to suit your fancy. You can swap nuts or omit any dry ingredient you’d like. For added flavor, you could add natural PB, or try adding chocolate chips to the mix once everything has cooled completely – Yum.
