
I was recently introduced to the site paleomg.com and I love it! This recipe was inspired by that site as I am sure many more dishes will be.
Carrots are sweet but work with a sugar free meal. This is a dessert that Owen and I will have after lunch tomorrow. I’m looking forward to it already,
- 2 cups cooked carrots (I used big carrots, quartered them, then steamed them until tender)
- 2 tbs coconut oil
- 2 tbs peanut butter (use your fave nut butter)
- 1 tbs vanilla extract
- 1 tsp cinnamon (or more)
- 1/2 tsp nutmeg
- shake of salt
Pure carrots in the food processor then add the rest of the ingredients and blend until smooth. This taste great and you don’t have many dishes to worry about – bonus!
Do you think these would still be good sans peanut butter?
