
I baked a dessert without chocolate. I’m not sure why I veered from my fave, but I did and they are great! I actually like lemon dessert quite a bit, and had a few very ripe lemons on hand so here’s what I’m eating today.
Combine all dry ingredients:
- ¼ cup coconut flour
- 1 heaping tbs almond flour
- dash of salt
- 1/2 teaspoon baking soda
In a separate bowl, whisk:
- 3 eggs (I used 1 egg + 2 egg whites)
- Big squirt (~¼ cup agave nectar)
- ¼ cup apple sauce + 1 tbs veg oil
- 1+ tablespoon lemon zest
Add wet to dry then fold in 1 tbs poppy seeds
Spoon 1 tablespoon of batter into greased mini muffin cup and bake at 350 for ~10 mins. Makes about 24 so share with friends =)
