Egg salad Sandy w Greek yogurt dressing

out of lunch meat, and don’t feel like tuna again… Make a simple egg salad sandwich as part of an easy and filling lunch. To make this superfast, prepare a few hard boiled eggs on Sunday.  They stay good in the shell for a few days in the fridge.

  • Use a fork to mash the eggs with Jalapeno Greek yougurt dressing (Costco)
  • Spread it on fresh bread
  • Top with a few slices of good cheese and Done
  • Also great with spinach, tomato and pickles

TIPS: Boil eggs in lightly boiling water for 8 minutes. If the water is boiling vigorously it could crack the egg before it’s ready. Peeling is actually easy. Run the eggs in cold water so you can handle them (or take them outta the fridge). Lightly hit all parts of the egg on the counter to crack the shell all over, then peel. You can often get it off in one piece.
