
I am so happy about this power bar – and if it matters, it’s gluten free. It is mainly filled with healthy ingredients, but the taste is awesome!! Beware, you should cut these into squares right away so you don’t eat half the pan as soon as you pull them from the fridge. The original recipe came from http://www.elanaspantry.com/power-bars/ but I modified based on what I had at home and my lack of time. It is also perfect for summer since it’s No Bake =)
These will be joining m every evolving lunch box for months to come.
In a bowl mix:
- 2 cups almond meal
- 1/2 ground flax seed
- 1/2 unsweetened shredded coconut
- dash of salt
- 1/2 cup natural PB
In another bowl, combine wet ingredients
- 1/2 cup coconut oil
- 1 tbs pure vanilla
- 2-3 tbs honey
Add wet to dry and mix well. Press into square pan and let set in the fridge for a while.
Melt dark chocolate chips, add some milk or almond milk to help it spread, top your base and cut into bars – yum!! Store it in the fridge
Do you think this would still work if I didn’t put the PB in? What could I use as a substitute?
Hi Tanya, These bars are my favorite – I am making a batch today (sometimes almond flour goes on sale at Bulk Barn). I’ve never tried a replacement for PB, but you would need something slightly wet that would also help hold the ingredients together. Although the flavour would be different, you could try:
Nutella, pure canned pumpkin, or apple sauce. I am not sure how those would work, but it is worth a try =) Let me know how it goes.
