Zucchini Boats

This week we hot HUGE zucchinis in our veggie share. I wanted to make a meals of them so I stuffed them with all sorts of good stuff! This variation is cheesy and colorful, but you could change them in all sorts of ways.

Cut the zucchini in half lenthwise and remove the insides so that you have about 1/2 an inch of base left. Place the zucchini in preheated oven (350) while you get everything ready

Cook 3 sausages to add to the mix (optional but highly recommended)

Heat olive oil in a skillet and add veggies as you finish copping them:

  • chop the inside of the zucchini
  • Dice the inside of the zucchini, orange pepper, mushrooms & cherry tomatoes

When the veggies are tender and the sausage is cooked, add it all together and add:

  • 2 tablespoons flour (I used spelt flour)
  • spices – oregano, thyme, parsley (whatever you have on hand)
  • grated Parmesan cheese

Mix everything well together then spoon it into the hollow zucchinis. Top with cheese of your choice (I used feta) and place back in the oven for another 15 minutes or until the zucchini is cooked through.

Serve hot zucchini boats hot! What a fun name for dinner. I like them with salsa and sour cream.
