This weekend was the Collins Bay Yacht Cub ChiliFest. It was a beautiful day and the clubhouse with packed with people and tons of amazing dishes. I made a turkey chili since turkey reminds me of fall. I was also pressed for time, so this chili came together quickly with many cans and very little chopping.
brown turkey with an onion first then add to slow cooker:
- 1.5- 2 lbs ground turkey – browned
- 1 diced onion
Add the following items:
- 2 chopped carrots
- I can chick peas (drained and rinsed)
- 1 can black beans (drained and rinsed)
- 3/4 cup corn
- 1 packet taco mix
- 5 cloves garlic (with a garlic press, or chopped)
- 1/2 cup salsa
- 3 tbs tomato paste
- 1 can of stewed tomatoes (I drained most of the liquid)
- 1 tsp coriander
- 1 tsp oregano
- a few generous dashed chili powder
- 1 tsp chili pepper
- 1/2 can beef broth
Mix it all up and let cook on low all day 5-8 hours. A great one pot dish that is ready to serve when you are. I actually recieved many compliments on this crock pot dish. I can’t wait for many more crock pot dishes this fall – ’tis the season! PS – I forgot to take a picture before it was gone.
