Sweet potato side with dill and purple beets

Frittata is an easy go to meal that is slightly different each time, but it best served hot with flavourful sides. On Friday, we enjoyed our veggie and cheese frittata with sweet potato fries and sauteed beets

  • chop a sweet potato in lots of fry like shapes
  • lay on cookie sheet in single layer
  • drizzle with olive oil – about 2 tbs
  • top with lots of fresh dill

Bake at 350-400 for 20 minutes, flipping once if needed.

Before you start chopping your sweet potato, fry up a couple beets. Beets take a while and can cook in the pan while you get everything else underway. They are sweet tasting and good looking.

  • peel 3 beets (I just used a knife and wasn’t worried about being too exact)
  • cube and cook in a little oil on a pan
  • crack fresh pepper and salt
