
Salad is not my strong point. I normally end up throwing Everything in my salad and they all taste the same. However, I was very pleased with this version of my fresh summer salad! In a bowl add the ingredients below. Add more or less depending on how many people are eating
- Spinach
- Red onion – thinly sliced
- sliced almonds, toasted – I just dry roasted them in a pan
- avocado – diced
- feta cheese – cubed
- strawberries – sliced
Drizzle with a homemade dressing. Combine:
- olive oil
- balsamic
- grainy mustard
- maple syrup (optional)
