
My mother-in-law makes the best stuffing! Luckily for us, we always leave stocked up with leftovers. Going along with my “no grocery store tonight” idea (see snack bar), I had to use what was on hand to feed my husband in between jobs (bathroom reno nearly complete).
- Red pepper cut in half and seeded. Roast in over for 15 minutes while you prepare the rest
- 1 can of tuna mixed with mayo
- stuffing (optional)
- grated extra old cheese (any cheese)
Layer each half of the roasted red pepper with stuffing & tuna and top it with cheese.
Bake at 350 for 10-15 minutes and finish with a broil. This was quick and filling, and best of all, oh so good with our favorite stuffing.
