Stuffed Peppers – Xmas style

 

You can stuff bell peppers in any which way,  but here is a recipe that worked well for me…

Cut the top off several peppers (as many ppl as you are feeding, plus enough for leftovers). Brown beef, saute veggies, cook rice, rinse beans, season, stuff, bake, Voila!

  • Cut the top off your peppers and gut them then place in an oven safe pan
  • Brown ground beef, or ground meat of any sort in large pan with Chili Seasoning
  • Cook brown rice or quinoa according to package
  • Chop veggies, including the tops of the peppers. I used onion and a can of diced tomato and a can of black beans
  • Mix everything together and spoon it into the peppers
  • Bake at 350 for 45 minutes or until peppers are tender
  • Add Cheese of choice for last 5 minutes

Serve on a plate with fresh bread – Yum!!

PS- this can also be prepared as a tasty veggie dish, & you can use different coloured peppers depending on the occasion (eg. Orange for Halloween) – FUN =)
