
As you may know, starting Monday it is strictly clean eating for me. Today I made a soup that I’m pumped about! It hope I can save some for lunch on Monday. Each week we get tons of veggies from our veggie share. With only two of us at home, I often don’t know how to get through all the food before it goes bad. Last week I roasted a big batch of carrots, zucchini, acorn squash and onion. We were slow eating this so today I decided to spruce it up and I am so happy with the results!
In a food processor add:
- 3 cups of roasted veggies (I used carrots, zucchini, squash and onion which were roasted with olive oil and s & p)
- 1-2 tbs curry paste
- 1/4 cup cream
- 1/4 almond milk
- 1/2 cup coconut milk
- 1/2 cup water
- Salt and pepper to taste
Blend this all together. Taste it as you go and add as you need.
Sounds fantastic. Not a lot in our fridge tonight so we are having the typical roast chicken and roast veggies. Don’t think we are up for you 21 day challenge though. Good luck!
