Looking for a light dinner? Try an appealing plate of fresh roasted kale with tomato and cheese. This recipe was inspired by our recent load of fresh veggies from our share.

Rinse kale and shake off water. Ripe leaves off stem and lay in a single layer on a cookie sheet. Brush or spray with oil and bake at 325 for 10-15 minutes – until just browned (do not overcook – it can burn quickly)

  • Place roasted kale on a plate
  • Add halved cherry tomatoes
  • Top with chunks of feta cheese

Easy as 1-2-3!
