Orange Carrots

A while back my friend (Alison) mentioned that she had cooked her carrots in orange juice – of course I tried this right away and although subtle, I loved the added flavor. During the 21 day challenge I tried to switch up my veggies a lot and always had loads of food ready to grab when temptation struck.

This recipe starts with steaming/boiling the carrots. There are lots of ways to go about this, but without any fancy gadgets, here is what I did:

  • 3 carrots, peeled and chopped in circles – (I’ve done long strips before too)
  • 1.5 cups orange juice, freshly squeezed or jugged

Pour the OJ into a pan, add the carrots, salt and pepper, turn up the heat, loosely cover and let them cook. Steam for about 10 minutes or until tender. You could stop here and enjoy your carrots with the rest of your meal or enjoy them as a snack. OR, you can continue on…

Next, move the carrots to a baking dish

  • toss with some coconut oil and spread in a single layer
  • Add some of the OJ – about 1/3 cup
  • Sprinkle with cinnamon

Bake at 350 for 10 mins or so. Yum!! I enjoy cooked OJ-Cinna carrots. Note: cutting your carrots lengthwise would make it easier to take on the road as a finger-food snack.

Normally I would grab crackers or fist fulls of cereal when I walked in the door, so to break this habit, I had to be prepared. These definitely helped 🙂
