
This was a side for our Father’s Day dinner. My father-in-law loves mushrooms, as do I. With so many varieties, I wanted to make something that would be inclusive =)
Wash mixed mushrooms thoroughly and chop really large ones into big chunks – about 4 cups
In a meduim sauce pan, bring to a boil
- 1/3 cup cider vinegar (or red wine vinegar – whatever you have)
- 1/3 cup olive oil
- 1/4 cup green onion, thinly sliced (could use regular onion)
- 1 teaspoon salt
- 2 tablespoons dried parsley
- 1 teaspoon ground dry mustard
- 2 tablespoon maple syrup
- 3 cloves garlic, peeled and crushed
Add mushrooms, stir and simmer 15 mins.
Serve cold in a colourful dish. The mushrooms will cook down a lot. This dish was a big hit, I wish I had more. You can any leftover liquid to pour over veggies before roasting.
