Healthy-ish Pancakes

Breakfast for dinner! Perfect for when you want something hearty and are craving something sweet.

  • 1 cup Oats (I like to grind mine in a food processor)
  • 1 tsp baking soda
  • cinnamon

Mix em up. In a seperate bowl mix the wet

  • 1 cup Greek yogurt (I like PC honey) You can also use cottage cheese or a mix of both
  • 1 cup of egg whites (or 3 eggs)
  • Big splash of almond milk (or skim milk)
  • 1 mashed banana if you have one
  • glob of honey

Make sure your skillet is hot! Greece the pan – use Pam spray, butter or whatever you’d like. Mix all the ingredients together and use a laddle to move to pan.

Top with fruit, jam, honey, nutella, or just traditional real maple syrup.
