Hawaiian sizzle on squash

Again with the leftover ham. I do love ham, but it’s nice to switch it up. I was thinking pizza or pasta, and ended up with a delicious and colourful medley or stir fried veggies, pineapple and ham over spaghetti squash. This dinner was a cinch with pre-chopped veggies (thanks Whitney for always encouraging the prep to save time – it works).  I actually cooked the squash the night before and had my broccoli and cauliflower chopped already.

Okay, so here is what you’ll need:

  • 1 spaghetti squash (cut lengthwise, remove seeds and cook at 350 face down on cookie sheet with 1cm water for 30+ mins)
  • 1 cup chopped broccoli
  • 1 cup chopped cauliflower
  • 1 cup diced ham (cooked)
  • 1 cup diced pineapple
  • 1 jar pasta sauce

Heat olive oil in a skillet and add broccoli and cauliflower. Cook for 10 minutes or so. Add pineapple and ham to skillet, then add your favorite (sugar free) pasta sauce and cook until everything is heated through. I actually used about a cup of brushetta (from Costco) and 1/3 cup of roasted vegetable antipasto, but any pasta sauce would be good. Scrape the squash from the skin – it will be stringy, like spaghetti. Pile it on your plate and top with hot veggie medley. Cheers!
