Ham & Potato casserole

Using up the leftovers! This simple dish was very fast to throw together since everything was already prepped from a previous meal. To make the same old food appealing, I switched up the presentation and coated it with cheese =)

  • Mini potatoes – chopped in half or quarters
  • Ham – cut into cubes – already roasted and ready
  • Roasted broccoli – cut into smaller pieces
  • Grainy mustard
  • Goat cheese

Add potatoes, ham and broccoli to a casserole dish. Spoon on some mustard and toss then top with cheese. Bake at 325 for 20 mins and finish with a 3-5 minute broil. Impressive twist on your meat and potatoes.

Note:  in the picture, 1/2 adheres to the TT challenge and 1/2 does not. The truth is, I made a potato salad for a dinner party as follows: I boiled and halved mini potatoes, added diced ham that I’d cooked the day before, coated with a mayo & Italian dressing and generously added parsley, rosemary, chilli flakes and salt n’ pepper.

When making the dish above, I put some of that potato salad in a strainer and rinsed it, ham, potatoes and all. It sounds a little nasty, but nope, it worked great!! With my new naked potatoes and ham, I had a fresh start and seasoned with mustard, chili pepper, S n’ P, added the broccoli and cheese and had a tasty meal =)
