garlic ginger string beans

Again, it seemed time to spruce up the veggie share and make use of our tons of beans! I’d never known how to cook these in a really flavorful way and always just chomped away on raw beans. But, this can be boring. This recipe is a full on veg dish and provides a flavor shot with each bite.

  • 1-2 tbs butter
  • 1 onion chopped
  • 3 cloves of garlic – sliced
  • 2 tsp minced ginger
  • 2 cups yellow or green beans
  • 1 tray cremini mushrooms (optional)
  • 1/2 can broth – vegetable or chicken

Melt the butter in a pan ad cook onions until translucent. Add the sliced garlic and minced (or fresh would be even better). Let sizzle for a a couple minutes then add the beans, mushrooms and broth. Cover and let simmer for 15 minutes. Uncover and cook longer to let more liquid evaporate if needed.

Serve hot or take to work as a snack.
