
As soon as my friend (Andrea) told me about her scallop dinner, I couldn’t get them off my mind. I thought of how I would put my own spin on the dish and my husband and I were totally delighted with how it looked and tasted. Having a constantly full fridge has worked to my advantage over and over again. For this recipe I decided to throw in half a block of cream cheese and milk right at the end to improve the texture
- Scallops – sear in butter and tons of garlic
To make the sauce, add the following ingredients to a pot or pan (I actually cooked pasta first, drained it, then added the sauce ingredients to cooked pasta, however, next time I would combine all the ingredients for the sauce separately in the order below first)
- Cream cheese, 1/2 block
- Butter, 4 tbs
- Pesto, 3-4 tbs
- Milk, 1/3 cup
Mix the sauce with the pasta then add the scallops. Use a spatula to get all the butter and garlic into the sauce. Top with fresh pepper.
This recipe was so so tasty. My husband claims it is one of the best yet!
