Coconut Quinoa

I had quinoa and hand and heard you could use it like oatmeal…. so, I decided to switch it up and try it with a sweet twist.

In a pot add:

  • 1 cup quinoa
  • 1 can coconut milk
  • 1 tsp salt
  • 2 tsp honey (more if you’d like)

Bring to a boil, stir then let simmer until liquid is absorbed (20 mins or so). Generously sprinkle shredded coconut on top before serving. Tasty treat! I added a few raspberries to make it pretty. Also on the plate is chicken, kale chips (with cinnamon), and roasted red pepper with goat cheese.
