Clean the Crisper Frittata

Tonight we arrived home after a lecture. I was eager to get to the couch and relax for an hour before bed so I wanted a quick dinner. We had a frige full of veggies so Fritta came immediately to mind. You can adapt this recipe to whatever veg, cheese (and meat) you have on hand. You can skip on the egg yolks if that suits you best.

Saute your veggies in a little olive oil in a skillet. Mine is oven safe which makes for minimal clean up. It is best to start with more firm veggies in the pan first and throw in tender veggies later. I diced the veg and threw mine in the pan in this order:

  • Broccoli – chopped fairly small. Chop up the stem an inch or two below the head, it’s all good.
  • Red onion
  • Mushrooms, I like cremini
  • Red pepper
  • Zuchinni

In a bowl, whisk together 6 eggs, add a pour of milk and salt & pepper. Once the veggies are tender, pour the egg mixture on top and let cook for about 7-8 minutes. Top with cheese, I used goat and old, then put in the oven at 350 for another 8 or so minutes.* Be carful not to grab the HOT handle when the pan is sitting on the counter

*tip, if your skillet is not over safe, dump the sauted veg into a casserole dish, pour in the egg, and put everything in the oven for 15 minutes or until cooked.
