Clean Chicken Curry

This is my new fav – try it out! A hot meal full of flavor and entirely good for you. As always, this recipe is versatile and you can sub in any veggies you see fit.

  • cube and begin cooking chicken in a frying pan

Chop veggies and add to pan

  • broccoli
  • carrot
  • onion
  • red pepper
  • zucchini

Let the veggies and chicken cooke for 8 mins or so (or until nearly cooked). Add a can of coconut milk and two tablespoons of Thai Kitchen curry paste (it is just a medley of spices). Mix it up and let it simmer for 5-10 mins.

Serve hot and eat up.
You could eat this as-is, or serve over rice, noodles, quiona etc.
