Chicken roll up – white and green

This is a new go to for dinner parties. The meat can be prepared ahead of time, and the taste is scrumptious. Great for leftovers too!

The key is to tenderize the meat. Place the chicken flat in a plastic bag and set it on a cutting board (this is just less messy). Once the chicken is flattened, it is ready to stuff

On the end of the chicken place:

  • slice of cream cheese
  • 1 tbs pesto

Roll the filling into the chicken breast and secure with a toothpick. Wrap with one slice of prosciutto. Bake in a deep(ish) dish for 23-25 minutes and finish with a broil for 4-5 minutes.

If you are pressed for time, make the chicken the night before, cover and keep in the fridge.
