
In an effort to not waste food, I’ve had to be creative. Without any hint of a recipe, I whipped up this thick soup and I have to admit, I am SO proud! I need to write this down while I still remember everything that threw into the mix because I will DEFINITELY be making this again.
I used many things but you can pick and choose.
Saute:
- broccoli 1/2 head
- 3 whole kale leaves
- green onion
In a pan, boil then bring to a simmer
- 1 can coconut milk
- 1 can vegetable broth
- 1/2 cup water
add one finely chopped white potato (no need to peel). Simmer for 15 mins, then add saute mix.
Season with:
- pepper & a little salt
- 2 tbs Parmesan cheese
- 2 tbs almond flour to thicken
The longer this sits, the better. I left the soup AS IS overnight. The next day, I put it all in a blender and served it hot with a dallop of Greek yogurt. SO so happy with this scrumptious soup. Perfect for the raining evening that’s upon us 🙂
