Black bean blender soup

Yup, this is as easy as it sounds. If you need dinner now – try out this on pot soup for a fast, clean-eating meal.

  • 2 cans of black beans (rinsed)
  • 1/2 jar salsa
  • 1 can chicken broth (or vegetable or beef broth)
  • 1-2 tsp ground cumin
  • 1/4 cup cream (or almond milk or greek yogurt – or you can leave this out all together)
  • 1 onion and 3 cloves of garlic chopped and sauteed  (you could also leave this out if you don’t have time)

Add everything to a blender except about half of one can of beans and pulse until smooth. Add in remaining whole beans for a more chunky texture. Heat and serve.

We just bought a Ninja Blender and absolutely love it! We are blending as much as possible there days =)
