I was recently introduced to the site paleomg.com and I love it! This recipe was inspired by that site as I am sure many more dishes will be. Carrots are sweet  but work with a sugar free meal. This is a dessert that Owen and I will have after lunch tomorrow. Looking for an easy lunch!! Roast a lot of red peppers at once, and you’ll be able to whip up a lunch in a snap. Remove the seeds from red peppers, cut in half, place open face down and bake at 350 for 15 mins or so (until the skin starts to blacken) – remove and let cool. Coconut Quinoa

I had quinoa and hand and heard you could use it like oatmeal…. so, I decided to switch it up and try it with a sweet twist. In a pot add: 1 cup quinoa 1 can coconut milk 1 tsp salt 2 tsp honey (more if you’d like) Bring to a boil, stir then let simmer until liquid is absorbed (20 mins or so).
