Last night I started to get a cold and didn’t feel like spending the night in the kitchen. Luckily we had a cooked chicken from loblaws that was easily paired with leftover veggies, salsa and 1/2 an avocado – easy! Dinner done! However, there was still lunch to think about. Again with the leftover ham. I do love ham, but it’s nice to switch it up. I was thinking pizza or pasta, and ended up with a delicious and colourful medley or stir fried veggies, pineapple and ham over spaghetti squash. Where there’s a will, there’s a way… I was really missing granola but knew I could throw something together to satisfy my taste buds while sticking to the TT challenge and continue clean eating.
