Truthfully, I wanted to make zucchini brownies but that did not happen. Although I was disappointed that my dessert was not entirely chocolate through and through, they still tasted really yummy! This week we hot HUGE zucchinis in our veggie share. I wanted to make a meals of them so I stuffed them with all sorts of good stuff! This variation is cheesy and colorful, but you could change them in all sorts of ways. Cut the zucchini in half lenthwise and remove the insides so that you have about 1/2 an inch of base left. Lately I have been totally loving almond flour. Some of our friends are gluten free so I’ve been experimenting. M first attempt at GF pie did not pan out, and with GF guests for dinner, I needed something else. My go to – chocolate!
