Quinoa Salad

This hearty salad can be served as a meal on it ‘s own. I paired my bowl with a fresh hunk of Fred’s Bread. I was full and happy with my healthy and colourful meal. This is a new go to for dinner parties. The meat can be prepared ahead of time, and the taste is scrumptious. Great for leftovers too! The key is to tenderize the meat. Place the chicken flat in a plastic bag and set it on a cutting board (this is just less messy). This was a side for our Father’s Day dinner. My father-in-law loves mushrooms, as do I.
