  You can stuff bell peppers in any which way,  but here is a recipe that worked well for me… Cut the top off several peppers (as many ppl as you are feeding, plus enough for leftovers). Brown beef, saute veggies, cook rice, rinse beans, season, stuff, bake, Voila! A very veggie meal! Prep time, cook time and eat time ~ 2 hours. Cook the spaghetti squash in the oven for about 50 minutes. Cut the squash length-wise, gut it and place it on a cookie sheet face down in a little water. It is done when you can easily stick a fork through it.
